This is an excellent 'dressing' for fruit salad. I did not have any fresh mint, but did have a bottle of mint extract. I experimented with the extract a 1/4 teaspoon at a time and for my taste, 1 teaspoon was perfect in place of the fresh mint. We had this over balled cantaloupe, mango, strawberries and blueberries.
Super dressing for fruit salad. Very sweet with the hint of mint. Is a little watery but serving with a slotted spoon takes care of that. We'll be using it again for certain. Made for Photo Tag.
This is really great. We had a salad of cantaloupe, honeydew, strawberries, blueberries, grapes, and pineapple and it was a very nice dressing. The mint smelled great while it was steeping, and added a great refreshing taste to the fruit. Thanks, Toni.
Very nice indeed! I used this with a fruit salad of watermelon, canteloupe, peaches and nectarines and loved it - especially the little 'nip' of tequila. The mint permeates the syrup and is so refreshing. A keeper - wish I could give more than 5 stars to an easy but 'perfect' recipe.
This was a huge hit at a party I took it to! As it was an adult party I doubled the amount of tequila and lime, and it was still pretty sweet. Everyone was really impressed. Will make again, for sure!
This is truly a lovely syrup! I made a half batch, and tossed it with grapes, apples and bananas. The tartness would go well with any sweet fruit. It was a little too zesty for the kids, but I loved it. Thanks!
Received lots of positive comments when I served this for my quilt group. I thought it was a little too sweet for the pineapple and will cut back on the sugar next time. Next time I will also try the mint extract and I wonder how it would be if made with Stevia. There was a lot of syrup left over in the bowl; so, I am going to save it and use it again in the next few days.
