Super Fast, Delicious, Easy, and Ooey Gooey Caramel Corn

"This caramel corn whips up really fast and is the perfect consistency and taste. I received it from some good friends of my parents. It always goes over well when a bunch of friends or family get together. Even though its easy, my husband requests it often. We like light corn syrup, but if you prefer a stronger flavor, use dark."

  • In a saucepan, bring to a boil butter, brown sugar, and corn syrup.
  • Place popped popcorn in large bowl and drizzle caramel mixture gradually over popcorn, while tossing and stirring to coat evenly.
  • Make sure to scrape the bottom as the mixture settles.
  • We love to serve it warm in all its ooey gooey goodness! Once you start, you can't stop.

  1. Cook short amount of time for soft caramel. I prefer crunchy caramel corn - I just boiled longer to hard candy stage. I don't use thermometer- I test drops on a plate let cool for a minute to check hardness. If you have a thermometer 290F- 300F for crunchy I also added 1/4 tsp vanilla. Added sea salt and walnuts to popcorn before pouring caramel. Cooled caramel corn fast in freezer then drizzled chocolate over cooled corn. Might as well!! Go all in! Also I used 1 bag of microwave popcorn. I could have used 2 bags. But I wanted more caramel vs popcorn. Used large parchment lined cookie sheet to pour caramel over corn makes clean up easier.,For a cracker jack copy substitute 1-2 tbs of molasses for corn syrup. Remove 1-2 tbs of corn syrup and add 1-2 2 tbs molasses. Thats what gives cracker jacks its unique flavor!
     
  2. This was so quick and easy! We made some to take to family movie night in the park! It's just plain delicious! The only comment I would make is to be sure to use the full amount of popcorn. Otherwise the caramel is too thick and the popcorn is too chewy instead of being crunchy.
     
  3. This was delicious, and so easy! I added peanuts, walnuts and pecans, laid it out on parchment after mixing, and sprinkled with sea salt. I'll be making this again and again!

  5. Very messy but tasty. I popped 1/2 c popcorn in my air popper and it made the perfect amount. I also microwaved the caramel, first melting the butter then adding the sugars and heating more until bubbling.

Tweaks

  1. Followed recipe until I sprinkled salt over the delicious snack. This gave it the sweet/salty taste I love so much.
