Summertime Pink Lemonade Cake

- 1 (18 ounce) package yellow cake mix
- 1 1⁄4 cups water
- 1⁄3 cup vegetable oil
- 3 eggs
- 1 quart vanilla ice cream
- 1 (6 ounce) can frozen pink lemonade concentrate, thawed
- 5 -6 drops red food coloring
- 1 cup whipping cream
- 2 tablespoons sugar
directions
- Prepare cake mix as directed. Bake in 2 9 inch round cake pans;cool.
- Meanwhile, stir ice cream to soften; quickly stir in 1/3 c of the concentrate and the food coloring.
- Spread evenly in foil lined 9 inch cake pan. Freeze for 2-3 hours until firm.
- Place one cake layer on serving plate. Place ice cream layer on top of first layer. Place second cake layer on top of ice cream layer. Place in freezer.
- Beat cream with remaining concentrate and sugar until stiff.
- Remove cake from freezer and frost tops and sides of cake with whipped cream mixture. Return to freezer for at least one hour.

This is a delicious and beautiful cake for a little girls summer birthday party. My Mom would decorate it with little plastic flying horses going around the outside in a circle and put three tall fire sparklers in the middle. It made you think of the 4th of July on a merry-go-round when she set it off. You can change this dramatically by using limeade for St. Patrick's day with green food coloring or orange juice for Halloween or a Harry Potter party with orange food coloring. I tried to post this but you have the exact recipe that I have. Right down to quickly stir in 1/3 etc. - bizarre! I wish I knew where we both got it from. It would be pretty made yellow for Easter with candies on top.
