Strawberry Mousse Parfait

- 315.37 ml quartered strawberries
- 14.79 ml sugar
- 4.92 ml fresh lemon juice
- 3.69 ml unflavored gelatin
- 22.18 ml water
- 118.29 ml chilled heavy cream
- 3 butter cookies, crushed
directions
- Dice 1C Strawberries and mix with sugar and lemon. Cut remaining 1/3C into a large dice and set aside.
- Sprinkle gelatin evenly over water in a very small saucepan and let stand for 1 minute to soften. Then warm over low heat stirring until gelatin is dissolved. Stir gelatin into mashed strawberries.
- Set bowl in a a larger bowl of ice and cold water and stir frequently until a spoonful of gelatin mixture holds its shape briefly before dissolving back into mixture. About 5 minutes.
- Beat cream in another bowl with a whisk until it just holds stiff peaks. Fold about a 1/2C of cream into gelatin mixture.
- In a decorative glass or dish, begin layering whipped cream, mousse, cookie crumbs and whipped cream until glass is full.

This recipe is getting 5 * because my DH LOVED it. I had a little trouble with this recipe. I ended up having to get my handmixer out in order for the diced strawberries and gelatin to make a mousse-like mixture. I think next time, I will leave the berries in bigger pieces and mash them that way. I also wasn't sure what to do with the extra diced strawberries so I just layered them with the rest of the ingredients. I doubled the ingredients and used a larger glass bowl to layer it in and there was plenty for 4 people. I will be making this again ~ thanks for posting!

I have just changed my image here on 'zaar. The big bird in the pic is none other than me, BirdyBaker. It was from Halloween 04. I made the costume myself and it was so much fun!. I am a highschool student and I love photography,painting crafts and everything else artistic. I LOVE to write, anything, from essays to fiction to poetry. It's so much fun!
