This is a great snack to keep in an airtight container for late night munchies. It is also great for bake sales or gifts...put about a cup in a baggie and tie closed with some ribbon.

  1. Preheat oven to 250 degrees.
  2. Grease a large roasting pan and pour in popcorn, cereals, and peanuts, stir to combine.
  3. In a large saucepan, combine brown sugar, corn syrup and butter and bring to a rolling boil.
  4. Boil for 6 minutes, stirring frequently.
  5. Remove from heat and quickly stir in vanilla and soda until light and foamy.
  6. Immediately pour over popcorn mixture and stir until coated well.
  7. Bake uncovered for 1 hour, stirring every 15 minutes or so.
  8. Cool completely.

A fantastic snack! I made this for my 2 year old's class for Valentines Day! I figured they would get enough "junk" that the parents might appreciate a healthier alternative! I left out the peanuts and added whole wheat alphabet pretzels instead. Thanks for sharing this recipe!

Yummy! Easy to make! Sometimes I add a cup of thin pretzels to the mix. Love the way the carmel tastes with the pretzels! Every time you stir make sure to take about a little spoonful to munch on!
