Pistachio Squares

"A good friend and former co-worker brought these squares to a baby shower a number of years ago. Makes for a very delicious dessert to take to a family gathering or any occasion and guaranteed you'll get lots of requests for the recipe. Bet when you try them, you won't be able to stop at just one!!!"

  • Mix first layer and press into 9 x 13 pan. Bake at 350 degrees for 15 minutes.
  • Combine ingredients for second layer and spread on first layer.
  • Mix pudding and milk; spread over second layer.
  • Spread remaining Cool Whip over third layer.
  • Sprinkle with chopped nuts.
  • Place in refrigerator until ready to serve.

  1. My mother made this recipe for years. She always called it Verna's Delight. I have no clue who Verna was or where she got the recipe. However, my mom usually made this with chocolate pudding mix and then put shaved chocolate on top. It is also very good made with vanilla pudding or one of my personal favorites, butterscotch pudding. Thanks for recipe and the great memories. Watch out, these truly are really addictive!
     
  2. A woman I knew made this once and I just loved it! One day I just tried it on my own and this is almost the same thing I did the differences I put 1 cup of powdered sugar and use the light cream cheese and light whipped cream Just WOW ??
     
  3. This recipe is delicious. It has always been a DD favorite, what she asked for every birthday. She recently was diagnosed with diabetes and I made it with splenda, sugar free pistachio pudding and sugar free cool whip. The second layer can be made by making the splenda into powdered sugar with your blender. DD says it tastes as good as the sugar version.
     
  4. Oh wow, the memories this dessert brings back. My grandmother used to make this for Christmas every year. She would make two different flavors, but my favorite was always pistachio.   1. My wife makes these every year for my birthday. Toasted pecans for the nut component makes all the difference. I wait patiently every year for them.
