My Grandmother ALWAYS had a pan of pink party squares made waiting for the grandchildren & great grand children. (and I am 53). My Gram passed away 2 yrs ago and whenever the relatives talk about her, the "pink party squares" always come into the conversation. I can't believe I found her exact recipe on the Internet! So as you can tell I love them. I don't dare make them very often because they do not stay around long. I am from Atlantic Canada and thought it was a local recipe. I am so glad others get to enjoy this delightful recipe.

So yummy! These were pretty easy to make and everyone loved them. I made a double batch and took them to work. I'm not a huge coconut fan myself, but I was suprised how much I liked them. I made them pink like the recipe said for the Think Pink Tag, but will definitley make these again using different colors :)

VERY, VERY TASTY BITES, THESE, & served to a small group (mostly women!) that I host each month! They were most appreciative of the tagging event for this recipe, & I even handed out a handful of recipe copies! The only change I made was to cut back on the sweetness (& I'm the one who has a sweet tooth!) by using unsweetened coconut & using somewhat scant measures for the sugar in both layer 1 & the icing!
