Instant Banana Date Dessert (Vegan & Good for You Too!)

"This is so yummy & sweet & a potassium & fiber powerhouse too. I came up with it lastnight & only wish I had some vegan whipped cream to go ontop. Of course whipped cream would be a great addition! Feel free to add some if you wish. It'd work as a great diet food too, if you follow my recipe exactly it has 250 calories (dunno if Zaar will recognise vegan creamer lol so I added it up myself)"

ingredients

  • 1 medium ripe banana, sliced
  • 14 cup whole pitted dates, quatered
  • 1 tablespoon soy coffee creamer (I use Silk Original)
  • 1 tablespoon chocolate syrup (I use Hershey's with 50% less sugar, carbs)

directions

  • Peel & chop the bananas & dates & mix them with the creamer in a bowl or a dessert dish.
  • Drizzle the chocolate syrup over the fruit & cream mixture & eat up!

I doubled this recipe to serve 2 of us, used Medjool dates & topped it all off with some homemade fudge sauce (yeah, I know, NOT low in sugar!), & we had A WONDERFUL DESSERT TREAT, thanks to your keeper of a recipe! But still, I can't understand how they can call it the "complete" vegan cookbook with no hummus recipes.
