Hot Bananas in Coconut Milk

  • Peel the bananas and cut into bite-sized pieces.
  • In a medium saucepan, bring the coconut milk to a boil. Add the sugar and cinnamon, stirring to dissolve.
  • Add the bananas.
  • Bring back to a boil, then turn down the heat and simmer for 2 - 4 minutes, until the bananas are tender but not mushy.
  • Serve hot, sprinkling extra cinnamon on top if desired.

  1. I made it and found it good. I think of it as comfort food. I also blended a serving so it was more like a pudding and liked that better. The next morning I mixed it with steel cut oats having cooked them with less water. It was a lovely hearty breakfast. Definitely more than 2 servings, IMHO.
     
  2. Absolutely delicious! I layered the bottom of my mug with marshmallows, added a drop of rum extract to the mix then poured it over the marshmallows to create a warm, sweet and very tasty treat. Thank you for the inspiration!

  3. This is DELICIOUS! I've never had anything like it before and wasn't sure since I'm not fond of coconut milk but it was great! I added cinnamon instead of nutmeg or all spice and dark brown sugar instead of granulated sugar. Added some vanilla extract too but I don't doubt that it would be delicious as written. I just used what I had and poured of ice cream. Would be great over pancakes or crepes!!! YUM-O!
     
  4. I subbed cardamom for the cinnamon and the kids loved it. This was especially great for a little guy that loves bananas and needed a hot breakfast before school. :D
