- 226.79 g neufchatel cheese or 226.79 g cream cheese, softened
- 473.18 ml Cool Whip Lite
- 118.29 ml sour cream or 118.29 ml light sour cream
- 118.29 ml natural-style peanut butter (smooth and unsweetened)
- 118.29 ml Splenda granular
- 4.92 ml vanilla
- fresh fruit, to serve (especially good with bananas and berries)
directions
- With a hand mixer beat together all ingredients except fruit.
- Beat until smooth and creamy.
- Scrape the sides and bottom down a few times.
- Great right away but will firm up a little more if refrigerated an hour or more.
- Serve with fresh fruit of choice.

OK, who could resist combining peanut butter and sour cream in a spoon after reading this introduction? I know I did, and good though that was, the complete recipe takes those two flavours to new heights...this recipe is delicious! I made the recipe as stated, ( using light ingredients, and in the food processor), and served it as a mousse for a company dessert, garnished with chopped peanuts. I also tried using it as a dip...strawberries first dipped in the whip, then in crushed peanuts...delish! Next time I will try a chocolate drizzle and banana variation. Peanuts are the go-to snack in our house, but this recipe gives the humble legume elegance for company.

Yummmmm. Think peanut butter cheesecake and you're on the money. I used low fat cream cheese, and fat free sour cream. I made 2 servings and after tasting a added more peanut butter (it ask for 1/8 cup of PB and I gave it 1/4). It whizzes up in seconds in the food processor. I can see this as a cake filling, sandwiched between cookies or spooned into a cookie crumb crust as well as the fruit dip/pudding as suggested. I have bananas to slice onto it for dessert later but wanted to do the pix now. This is very rich tasting and if your not sugar impaired try swirling some jam through it. Engrossed, I think you have a real winner here!
