Chocolate Pudding (Raw)

"From http://www.therawtable.com/recipecoll/chocpudd.htm . Originally I suggested using agave nectar but I highly suggest you use raw uncooked honey as agave has more fructose than HFCS."

directions

  • Place everything in a high-power blender or food processor and blend on high until very smooth. You may need your temper /spoon to move the contents a little so the motor doesn't bog down on you.
  • Keep stored in an air-tight container in the fridge if not eating right now.

  1. Wow! Such a creamy pudding with no actual cream involved, and really, really easy to throw together. My only criticism is that the agave nectar is SUPER sweet. I would recommend cutting it in half to 1/4 cup to start, then add more as needed. Also, I did not have any cocoa powder available, so I substituted 3 squares of baking chocolate which I pre-melted in the oven in a Corning Ware dish at 110 Celcius/230 Farenheit.

  2. This was a pleasant surprise. It was rich and tasty but light at the same time. I didn't have coconut cream so used regular cream.
