Berries With Banana Cream (Fat Free)

"This is a slight adaptation of a recipe from one of my favorite cookbooks, "500 Fat Free Recipes." This is a lovely end to your meal that you can feel reasonable eating. Healthy and decadent tasting though still helping you get all your fruit servings. I used raspberry flavored honey which was lovely, but any honey will be good here. The original recipe called for 2 cups strawberries but I really enjoyed the strawberry/blueberry combination."

  • Peel the bananas and slice them into rounds. Keep the rounds frozen until you are ready to make and eat.
  • In a blender or food processor put the yogurt and honey and blend until mixed. Then add the banana rounds and process until smooth.
  • Put some banana cream in the bottom of each parfait glass. Add some sliced strawberries and some blueberries. Add more cream and more berries until all your supplies are used up.
  • Eat right away!

  1. oh man. its unbelievable that this is essentially fat free. Its scrumptious, delicious, wonderful, addictive and a few other words :) Regarding peeling the banana, i found letting them sit on the counter for 5 minutes or so helped after a rinse under hot water. The banana stayed frozen. typing with sticky fingers and now back to finishing it!! Discovered on another recipe that you can peel the bananas before freezing without a change in the color :) so thats what i will do next time
     
  2. I am a big fan of yogurt and was happy to try this out. I made this for my lunch. It was really creamy, like the other reviewers said. I just added some strawberries and blueberries to it. Can't wait to try it out on the kids. Roxygirl
     
  3. Excellent. Hubby doesn't like plain yogurt, but the addition of the honey and banana had him saying YUMMY. The added berries just make it all the better. Served for breakfast.
     
  4. Such a simple and delicious treat. This will definitely going into my healthy desserts arsenal. My parfait included strawberries and blackberries as the blueberries in the store looked rather tired. I'm not a huge fan of stong honey flavors so I cut back to 1 tablespoon. The cream is just so good and creaamy is really the right word for it. Next time I want to skip the honey and add a drop of almond extract which goes well with both berries and bananas. Thanks ladypit!
     
  5. I made these for my kids and a couple of their friends last night and everyone just loved them. Very light and refreshing on a hot summer night. I had some trouble peeling the frozen banana, but that was probably due to having a dull knife. I made as directed. Thanks.
