Almond Peach Muffins

"These were entered into a taste of home muffin contest, by Robin Henry. This recipe was in the top 12! I think it sounds absolutely amazing!! Yummy stuff!"

  • In a large bowl, combine flour, sugar, salt and baking soda.
  • In another bowl, beat eggs, oil and extracts; stir into dry ingredients just until moistened. Fold in peaches and almonds.
  • Fill greased or paper-lined muffin cups three-fourths full. Bake at 375 for 20-25 minutes or until a toothpick comes out clean. Cool in pan for 10 minutes before removing to a wire rack.

  1. I have made this recipe many times over the past few years and they are always a hit. This morning I topped them with a but if strusel. Yum!
     
  2. Great recipe! I used whole wheat. Cut sugar in half. Used 1/4 cup apple sauce and 1/4 cup vegetable oil, instead of 1/2 cup oil. Turned out very moist flavorful muffins!
     
  3. Delicious! I tried once as is, and then again with half the sugar and baked for a full 25 min. Turned out great!
     
  4. My family and I went peach picking over the weekend, so I've been trying lots of new peach recipes. These muffins were fabulous! Will make another batch tomorrow for the freezer. Got them down to 4 WW pts by substituting applesauce for half of the oil.
     
  5. I made these muffins for my son who is on a Gluten free/casein free diet. I changed the flour, so that he could eat them. They tasted so good I had to make more later that evening. My hubby is now addicted to them also, and he is not a muffin man normally. Thanks for the great recipe!
